Vinified in an old school type like wines until the 1960's with higher volatile acidities in order to be aged for decades.

One of the best wines made mostly of Cabernet Sauvignon with Malbec and Petit Verdot. The Fillastre family has run the estate for the past 400 years. The vines average over 50 years old and some exceed 100 years old. Made in the old, traditional style, the very low yields produce a wine with terrific concentration and structure that is built to last. The wines are unfiltered and are bottled and corked by hand. Because the estate is tiny, with just 1.3 hectares (3.25 acres) of vines, production is very small. There is no bad vintage for this estate.

Quelles sont les vignes qui produisent naturellement le moins hum ?

 

M. Fillastre un peu anxieux car la sécheresse se fait sentir. Comme vous pouvez le voir, les herbicides sont proscrits ici.
